Orange Glazed Sweet Potatoes

8 medium sweet potatoes or l large can of sweet potatoes or yams*
l cup brown sugar packed
2 Tbsp. cornstarch
1/2 tsp. salt
2 cups orange juice
1/2 cup raisins (optional)
1/2 tsp. shredded orange peel
6 Tbsp. margarine
l/4 cup chopped walnuts

If using fresh sweet potatoes cook them with the 1/2 tsp. salt and peel and cut lengthwise in a casserole dish. If using canned yams or sweet potatoes layer them in a greased casserole dish.

In a saucepan combine brown sugar, cornstarch, and salt. Blend in orange juice, raisins, and orange peel; cook over medium heat. Stir and cook for l minute until mixture is thickened and bubbly. Add margarine and walnuts stirring until butter is melted. Pour sauce over sweet potatoes or yams.

Bake at 325 for 30 minutes until sweet potatoes are glazed.

Notes:
*You can also use baking apples in place of sweet potatoes for another side dish.

You can also add dried apricots or coconut to either the sweet potato or apple recipe.
