California Avocado and Shrimp Fritters
These golden brown beer-battered fritters make a quick and easy hors d'oeuvre. Guests always remark that they've never had cooked avocados and how good they taste.
1 cup flour 1 egg 1 can beer 1 tsp salt 1 jalapeno, finely minced 2 avocados, diced 1 Pound small raw shrimp, cleaned & peeled
Mix first 5 ingredients to form batter.
Fold in avocado and shrimp. Drop heaping tablespoons of mixture into hot oil.
Fry approximately 2 minutes until golden brown. Drain and serve hot.
