Jalapeno Summer Sausage
5 lb ground beef 6 jalapeno peppers, seeded and chopped 1 tbsp black peppercorns, cracked once 2 tbsp curing salt (kosher salt) 1/4 tsp garlic salt 1 tbsp liquid smoke 1/4 tsp mustard seed 1/4 tsp onion salt
Mix all ingredients well. Form into 2 rolls and wrap tightly in foil. Refrigerate 24 hrs.
Bake over broiler pan with water at 350 F. for 1 1/2 hrs. Remove from foil after baking. Good served hot or cold.
