This is a very easy and tasty variation on the same old egg salad recipe.
Egg Salad (with oil and vinegar)
6 to 10 hard boiled eggs 1/4 cup red wine vinegar 1/4 to 1/2 cup olive oil one small onion diced salt pepper
Chop the eggs add the onion in a bowl.
In a seperate container mix the vinegar and olive oil. Pour over the aggs and onion mix together well. Add salt and pepper to taste.
Dip chunks of crusty toasted bread into the mixture and enjoy. This is one of my husband's favorite egg dishes.
