Arroz Con Leche De Coco
4 tbsp butter, divided 1 coconut, finely shred coconut meat; reserve liquid 1 medium onion, finely chopped 1 tsp salt 1/2 cup cooked rice
Heat 2 tbsp of the butter well and brown the shredded coconut.
In another pan, fry the onion in 2 tbsp of the butter. Add heated liquid from the coconut and the salt. Let it boil, then the lower heat.
Add the coconut meat and let it cook for 20-25 minutes until it is soft and dry. If necessary, add more water.
Stir in the pre-cooked rice, mix and serve.
Excellent with beef, chicken or seafood. |
