This omelette (as the Spanish Potato Omelette) is great served as an appetizer in slices or cubes with a toothpick (like a banderilla).
Tortilla De Chorizo (Chorizo Sausage Omelette) 1/4 cup olive oil 3 cloves garlic -- finely chopped 1 medium onion -- chopped 3 medium potato -- sliced 1/2 teaspoon salt 1 small bell pepper -- chopped 1/2 teaspoon pepper 2 medium chorizos -- chopped 6 large eggs 2 tablespoons water In skillet, saute in oil, unpeeled garlic clove (crushed). discard garlic, when brown.
Add potatoes to oil and fry until brown. Remove potatoes and pour oil minus about 3 tablespoons.
Add onion, green pepper, chorizo and saute. Cook for 5 minutes.
Add potatoes and simmer 2 minutes.
Beat eggs with water, salt and pepper adn pour over mixture in skillet. Make into omelette and cook until eggs set. Flip and cook until golden brown on both sides. Serve.
