Mexican Pinwheels
A seasoned meat filling gives the cinnamon roll concept a new twist.
1 loaf frozen bread dough, thawed* 1 pound lean ground beef 1 tablespoon dry minced onion or 1/2 cup fresh minced onion 1/2 (1.25-ounce) package taco seasoning** 1 (8-ounce) can or 2/3 cup tomato sauce 4 ounces cheddar cheese, grated
Brown meat and drain well. Combine meat with onion, taco seasoning and tomato sauce.
Roll out dough into a rectangle 1/4-inch-thick. Spread meat mixture evenly over the dough. Starting at the short side of the rectangle, roll up as for cinnamon rolls.
Cut into 8 slices. Arrange pieces loosely, cut side up, in a 9x12-inch greased baking dish, making sure pieces are barely touching each other. Let rise 30 minutes.
Bake in a preheated 400F oven for 20 minutes.
Sprinkle cheese over top of pinwheels and bake 10 minutes more.
*Any home-made dough recipe calling for 3 cups of flour may be used. **Because sodium figures are not available for taco seasoning mixes, the sodium figure for this recipe is not accurate. The additional sodium will be significant.
