Veggie Pita Melts

Fresh vegetables in a pita give grilled cheese sandwiches new meaning.

3 pita pocket breads (6-inch)
1 1/2 cups sliced, fresh mushrooms
2 1 2 cups shredded yellow crookneck squash or zucchini
3 sliced green onions
1 cup sweet red pepper strips
1 cup celery
1/4 teaspoon salt
1/2 teaspoon black pepper
3/4 cup shredded low-fat mozzarella, or Monterrey Jack cheese
Diced, precooked meat (optional)

Cut each pita in half and open. Combine mushrooms, squash, onions and red pepper. Microwave on high, uncovered, 4 to 5 minutes or just until tender, stirring once. Drain. Stir in salt, pepper and cheese. If desired, add your favorite precooked meat.

Stuff pita with filling. Place on paper towel-lined platter; cover. Microwave on high 1 to 1 1/2 minutes or until filling is heated and cheese starts to melt, rotating dish once.

Makes 6 sandwiches
