Baked Doughnuts
1 tbsp dry yeast 1/4 cup warm water 1 1/2 cups milk 1/3 butter 5 cups all purpose flour 1 tsp salt 1/4 cup sugar 1/2 tsp nutmeg 1/2 tsp ginger 2 eggs 4 tbsp (1/2 stick) butter cinnamon sugar
Dissolve yeast in warm water and set aside.
Scald milk, add 1/3 cup butter, and stir until butter melts.
Sift together flour, salt, sugar, nutmeg, and ginger. Pour milk mixture into bowl and when cool, beat in eggs. Add yeast and beat in dry ingredients to form a soft dough.
Cover and let rise until doubled.
Punch down, turn out onto floured board, and knead several time. Roll out to 1/2-inch thickness and cut with a doughnut cutter. Place doughnuts several inches apart on greased baking sheets and let rise until doubled.
Brush with melted butter, and sprinkle liberally with a mixture of cinnamon and sugar.
Bake in a preheated 425 degree oven 10-12 minutes, or until brown.
