Carrot Bran Bread
3/4 cup bran cereal 1 cup raisins 3/4 cup Egg BeatersŪ or 3 large eggs 1/2 cup Fleischmann'sŪ Original Stick margarine, melted and cooled 1/3 cup fat-free milk 1 3/4 cups all-purpose flour plus 2 tbsp for dusting 1 cup granulated sugar 2 teaspoons baking powder 1 teaspoon baking soda 1 1/2 teaspoons ground cinnamon 1 1/2 cups shredded carrot PAMŪ No-Stick Cooking Spray 1/4 cup powdered sugar
Preheat oven 350F.
In a medium bowl, combine bran cereal, raisins, eggs, Fleischmann's, and milk; let stand 5 minutes.
In a separate bowl, combine flour, sugar, baking powder, baking soda and cinnamon; gently stir into bran mixture until just blended. Do not overmix. Fold in carrots.
Coat an 8-inch by 8-inch baking pan with cooking spray. Lightly dust with a small amount of flour.
Bake 55 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool on wire rack. Dust with powdered sugar; slice into 18 pieces to serve.
