Smashing Blueberry Loaf
1/2 cup butter 1 cup sugar 2 eggs 2 cups fresh blueberries, pureed with one tablespoon water 1 teaspoon lemon juice 2 cups flour 3 tablespoons baking powder 1/4 teaspoon salt 3/4 cup fresh blueberries
Cream butter and sugar. Add eggs, beat until light. Add pureed blueberries to cream mixture.
Sift flour, baking powder and salt. Add to blueberry mixture. Add 3/4 cup blueberries.
Bake in a greased loaf pan at 375F for approximately 1 1/4 hours.
