Bombocado (Coconut Brownies)
3 cups granulated sugar 2 cups milk 1 1/2 cups grated coconut 3 eggs 1/2 cup all-purpose flour 5 tablespoons white mild cheese, grated* 1 tablespoon margarine 1 tablespoon baking powder 1 pinch salt
Preheat the oven to 350 F. Butter and flour a 11 x 8 inch pan.
Combine all ingredients in a blender and beat until well mixed. Pour the batter into the prepared pan.
Bake for about one hour, or until golden brown. Cool the cake and cut 2x1-inch bars.
*Use mozzarella or farmers cheese.
