CHILIMEX CASSEROLE
1 lb. lean ground beef 2 (15oz.) cans chili con carne with beans 1 (12oz.) can Mexican-style corn 1/2 tsp. salt 1/4 tsp. pepper TOPPING: 1 cup corn bread mix 1 cup cottage cheese 1/3 cup water
Preheat oven to 425 degrees.
In a large skillet*, cook ground beef until meat looses its pink color.
Stir in the chili con carne, corn, salt and pepper. Pour into an 11x7-inch casserole and set aside.
TOPPING: In a small mixing bowl, combine corn bread mix, cottage cheese and water. Drop batter on top of meat mixture.
Bake in preheated oven for 30 minutes, until browned and bubbly.
*I cook the beef mixture in a cast-iron skillet and use it to bake in oven.
