Serrano Ham with Fried Oranges
6 thick slices of crusty bread, about 2 inches square 1 orange flour 1 beaten egg olive oil 6 tomatoes 6 slices of Jamon Serrano Ham 1 cooked egg white, diced chives
Lightly toast the bread.
Cut the peel and pith from the orange and then cut into small segments, removing the pits. Dust with flour and then dip each segment in the beaten egg.
Fry the orange segments in olive oil until light golden brown, turning once for about 2 minutes and then place the segments on kitchen paper to drain off excess oil.
Cut the tomatoes into small pieces removing the seeds.
Place a piece of ham and a segment of orange on each slice of toast. Add the diced egg white, chopped chives and small pieces of tomato and serve.
