Gambas al Ajillo (Prawns in Garlic)
1/2 cup olive oil 4 cloves of garlic, finely crushed 1 red chilli, seeded and chopped 1 lb (450g) peeled uncooked prawns (grey) salt 2 tbsp parsley, chopped 1 lemon, sliced bread
Heat some olive oil in a frying pan. Add the chopped garlic and red chilli and cook for 1 minute.
Add the uncooked prawns and a pinch of salt and cook for about 3 minutes, turning frequently. Add the chopped parsley and mix well.
Serve hot in 4 pre-heated cazuelas (brown dishes) or similar with slices of lemon and warmed crusty bread to soak up the juices.
