Conch Fritters
1/2 cup of flour 2 tablespoons of baking powder 1/4 cup of evaporated milk 1 large egg 1 small onion, chopped 2 stalks of celery, chopped 1/2 red sweet pepper, chopped Cayenne pepper to taste Salt and pepper to taste 1 conch (which can be replaced by 200 grs of calamari, shrimp, welks, or any seafood or shellfish of your choice) chopped 1 liter of vegetable oil
DIP: 1/2 cup of ketchup 2 tablespoons of mayo The juice of 3 lemons salt and pepper to taste Hot sauce to taste MIX ALL INGREDIENTES TO MAKE DIP
Pre heat vegetable oil in deep pan. Make sure that it is not too hot that it will brown the mix too fast, leaving the inside raw.
Make a batter mixing egg with milk, flour, baking powder, salt, pepper and Cayene pepper. Add chopped vegetables and conch (or seafood).
Deep fry dropping the mix by spoonfuls until golden. Let rest on absorbent peper towel. Serve immediately with dip on the side.
(*) his is a Bahamian recipe and I have made it many times. It is delicious and a great munchie to accompany drinks and good conversation with friends. Conch is hard to find out of the Bahamas and we live in Peru (my husband is Bahamian and we "smuggle" frozen conch from Nassau to Lima every time that we have a chance :o) ) so using an alternate seafood sounds like a great and delicious idea.
