Citrus Tofu Stir-Fry

366 Healthful Ways to Cook Tofu and Other Meat Alternatives by Robin Robertson This unusual combo is ideally suited for a hot summer day. It is light, refreshing, and quick to prepare. Serve with basmati rice.
2 tablespoons safflower or canola oil
1 small onion, minced
2 teaspoons minced fresh ginger
1 fresh green chili pepper, seeded and finely chopped
1 pound firm tofu, cut into 1/2-inch cubes
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice
1 tablespoon low-sodium tamari
2 tablespoons chopped fresh cilantro
Heat the oil in a wok or deep skillet over medium-high heat.
Add the onion and stir-fry 1 minute, then add the ginger and chili.
Stir-fry 30 seconds, then add the tofu.
Stir-fry 3 minutes, then add the orange and lemon juice and tamari.
Stir-fry 1 minute, then add the cilantro and toss well.
