Jeweled Kiwi Salad with Citrus Ginger Dressing Source: Lynda's Low-Fat Kitchen: Meatless Meals for Every Day by Lynda A. PozelSalad: 5 oranges, peeled 4 kiwi fruit, peeled and sliced 2 pints strawberries, hulled and halved 2 bananas, peeled and cut into chunks Dressing: 2 Tablespoons honey 1 Tablespoon lemon juice 1/3 cup orange juice 1/4 teaspoon ground ginger 1 Tablespoon crystallized ginger, slivered To make salad: Cut oranges crosswise into 4 slicws. Cut each slice into 8 pieces and place in a medium-size serving bowl. Add kiwi and bananas. Set aside. To make dressing: Combine all dressing ingredients, except crystallized ginger in a small saucepan and stir over low heat until blended. Set aside to cool. Toss dressing with salad. Sprinkle with crystallized ginger and refrigerate for at lease one hour to allow flavors to blend. Serve chilled.
