Banana Cake Source: With Great Gusto by The Junior League of Youngstown, Ohio1 package yellow cake mix 2 bananas, mashed 1 small (4-servings) package instant banana pudding 1/4 cup oil 2 eggs 1 1/2 cups water 1/2 teaspoon lemon juie 1 teaspoon vanilla 1/2 cup chopped nuts Preheat oven to 350 degrees F. With electric mixer on low speed, combine all ingredients except nuts in a large bowl. Beat on medium speed for about 2 minutes. Fold in nuts. Spread in 2 greased 9-inch cake pans. Bake for 25 to 30 minutes, or until toothpick inserted in center comes out clean. Yields 10 servings.
