Raspberry Banana Bonanza
1 pkg. (12 oz.) frozen raspberries 1 banana, peeled, cut into chunks & frozen (see note) 3 cups frozen whipped topping, thawed 1 Tablespoon rum, optional 2 Tablespoons sugar
Place frozen raspberries and frozen banana chunks in food processor with blade attachment in place. Process until the raspberries and bananas are finely chopped.
Add remaining ingredients and process until smooth.
Serve immediately as a light raspberry/banana mousse or place in a plastic bowl, cover and freeze until ready to serve. Soften slightly before serving, if desired.
Note: To freeze bananas, peel and cut into 2-inch chunks. Place in a resealable plastic bag and place in freezer for 1 to 2 hours.
