Italian Beef Stir Fry 1 lb. beef round tip steaks, sliced thin 2 crushed garlic 1 tbsp olive oil 2 cups zucchini, sliced thin 1 cup cherry tomato halves 1/4 cup Italian salad dressing 4 cups hot cooked spaghetti (or rice) 1 tbsp. grated parmesan cheese salt and pepper to taste
Heat oil in large skillet. Add crushed garlic; cook and stir for 1 minute.
Add beef strips, cook and stir for 1 to 2 minutes or until no longer pink. Remove beef with slotted spoon; keep warm.
Add zucchini to skillet; cook and stir for 2 to 3 minutes or until crisp-tender.
Return beef to skillet; pour dressing over all. Heat through.
Serve beef mixture over hot, cooked pasta or rice. Top individual servings with Parmesan cheese.
