Pop's Salsa Fresca Source: What's Cookin' in Arizona!: More Than 240 Recipes from Arizona Celebrities & Personalities6 tomatillos (wash and remove outside flaky coating) 6 nice medium tomatoes 2 bunches of green onions 1 fresh jalapeno (very optional) 2 large cans (7 ounces each) diced green chiles or 2 cups fresh, diced, roasted and peeled green chiles 1 bundle fresh cilantro 1/4 cup oil 2 Tablespoon vinegar Salt Pepper 1/2 teaspoon oregano Dice the tomatillos, tomatoes, onions, jalapeno (if used), green chiles and cilantro, putting them in a big bowl as you go. Add the oil, vinegar and spices at the end (to taste) and stir. Stores well in a covered bowl or large jar in the refrigerator. Makes about 4 cups.
