Vegetarian Pasta
3 cups shell pasta 1 potato, peeled, diced 1 tbsp olive oil 1 carrot, peeled, diced 1 White onion, peeled, chopped 1 cup green peas 1 can tomatoes 1 tbsp minced garlic Salt and pepper to taste
Boil the shell pasta and potato (separately) until soft; drain.
Heat the olive oil a saucepan over medium-high. Add the carrot, onion, green peas garlic, salt and pepper and cook until carrots are soft.
Add in tomatoes, bring to a boil.
Stir in the pasta, cook for another 3 to 5 minutes, and it's ready to serve.
