Carrot Raisin Salad
4 medium carrots, shredded 1 cup cooked peas 1/4 cup raisins juice of 1 lemon 2 teaspoons sugar
In a medium bowl, thoroughly mix all ingredients together.
Serve chilled. Use it on a picnic, as a light lunch or as a stuffing for a pita pocket sandwich.
