Lasagna Loaf
1 cup fat-free cottage cheese 1 whole egg, beaten 1/4 cup reduced fat parmesan cheese 1 tsp parsley 4 pieces oven-ready lasagna noodles 13 oz low-fat spaghetti sauce 8 oz low-fat mozzarella cheese, shredded
Preheat oven to 350.
Prepare a 9x5-inch loaf pan with cooking spray; set aside.
In a small bowl, combine cottage cheese, egg, parmesan cheese, and parsley. Mix well.
Cut one lasagna noodle into three pieces. Place one lasagna noodle and one cut lasagna noodle onto bottom of prepared pan.
Cover with layers of 1/4 pasta sauce, 1/4 cottage cheese mixture, and half the shredded cheese. Repeat all layers twice.
Bake for 30 minutes, or until bubbly. Let stand ten minutes before serving.
