Broccoli and Everything Salad
3 cups raw broccoli, washed and chopped (peel thick skin from stalk) 1 medium carrot, peeled and diced 2 stalks celery, washed and thinly sliced 1/2 cup raisins 1/4 cup onion, chopped (about 1/4 of a medium onion) 1 cup ham (cooked), or cooked diced chicken or turkey (about 3 ounces) 1/4 cup mayonnaise (try light) 1/2 cup plain, lowfat yogurt 1 tablespoon sugar 1 teaspoon vinegar, white or red
In large bowl, mix broccoli, carrots, celery, raisins, onion, and meat.
Mix together mayonnaise, yogurt, sugar, and vinegar in separate bowl. Add mayonnaise mixture to salad and mix well.
Servings: about 10-12 servings, 1/2 cup each
