Cuban Rice and Beans
2 teaspoons vegetable oil 1/2 pound smoked turkey sausage, cut into 1/2 inch thick slices or leftover cooked meat 1 medium onion, chopped 1 medium bell pepper, chopped 1 15-ounce can black beans, drained and rinsed 1 15-ounce can diced tomatoes or 2 cups fresh, diced tomatoes 2 cups cooked rice
Heat oil in a large skillet over medium-high heat (350 degrees in an electric skillet). Add sausage, onion, and pepper. Cook and stir 3-5 minutes or until sausage is browned and vegetables are tender.
Add beans, tomatoes, and rice. Cook and stir 2-3 minutes or until hot.
Tips: Make a double batch and freeze one for later.
Servings: About 8 servings, 1 cup each
