GREEN BEANS WITH TOMATOES AND HERBS (DIABETIC)
1 tablespoon olive oil 1 small onion, minced 2 cloves garlic, minced 1 (14-ounce) can crushed tomatoes 1 teaspoon minced basil 1 teaspoon minced oregano 1 pound trimmed green beans salt and pepper, to taste
In a medium skillet over medium heat, heat the oil. Add the onion and garlic and saute for 3 to 4 minutes.
Add the tomatoes, basil and oregano. Cook for 2 minutes.
Add the green beans. Cover and cook for 6 to 7 minutes. Season with salt and pepper.
