EASY YUMMY PEACH CHEESECAKE
This is from my sister's sister-in-law. It is easy, beautiful to look at and very Yummy!
1 graham cracker crust shell FILLING: 2 pkg. (8 oz each) cream cheese (can be lite), softened 1/4 cup sugar 1 tbsp. milk 1/4 tsp. vanilla TOPPING: 2 cups canned sliced peaches* 1/4 cup apricot jam
Beat together the filling ingredients until there are no lumps. Pour into the graham cracker crust shell.
Place peaches in single layer on top.
Heat apricot jam in the micro for 30 seconds or until liquid. Pour over the peaches. Refrigerate for 2 or more hours before serving.
*I guess that fresh peaches could be used but have never tried it. - Judy
