PROSCIUTTO AND GRILLED VEGETABLES
VEGETABLES: 4 slices grilled eggplant 2 halves grilled zucchini 4 halves grilled yellow summer squash 1 1/2 cups sliced grilled red, green and yellow bell peppers MUSHROOMS: 1 cup grilled mushrooms, cut in halves 1 tbsp. chopped fresh parsley 1/8 tsp. salt 1/8 tsp. crushed red pepper PROSCIUTTO AND BREADSTICKS: 8 thin slices prosciutto (Italian ham) 4 long, thin breadsticks, broken in halves SALAMI AND CHEESE STICKS: 8 thin slices Genoa salami 4 oz. Fontina or Provolone cheese, cut in sticks
Grill vegetables.
Mix mushrooms, parsley, salt and red pepper in a small bowl. Place on serving platter.
Wrap ham around breadsticks and salami around cheese.
Arrange on platter with remaining ingredients.
