I cut this recipe from the newspaper some time ago, I have not tried it.
Tortilla Beef Soup
1 1/2 pounds ground beef, cooked and drained 2 cans (14 1/2 ounces each) Mexican-style stewed tomatoes, chopped 2 cans (4 ounces each) diced green chiles 3 stalks celery, chopped 2 cans (15 ounces each) black beans 1 cup frozen corn kernels Water
Garnish with: Sour cream Tortilla Chips Sliced olives Colby-Jack cheese, shredded
Place ground beef, tomatoes, chiles, celery, beans and frozen corn in a slow cooker or large pot. Add water to achieve desired soup consistency. Simmer all day on low in slow cooker or for 30 minutes on the stovetop. Serve garnished with tortilla chips, olives, cheese and sour cream. Makes 6 to 8 servings.
