CASSAVA BREAD
1/2 cup warm water (105 to 115 degrees F) 3 tsp yeast 1 tsp sugar 1/2 cup warm milk 3 tbsp lard or shortening, melted 1 egg, beaten 1 tsp salt 4 cups flour 1 1/2 cups grated fresh cassava (yucca)
Grease a loaf pan or baking tin; set aside.
Add yeast and sugar to warm water and let stand to proof.
Combine warm milk, melted fat, egg, and salt. Add flour and cassava and stir well. Add yeast mixture. Stir.
Knead until smooth and elastic. Shape as desired, put in prepared tin, and let rise until double its size.
Preheat oven to 400 degrees F.
Bake loaf in oven for 20-30 minutes.
