3 red bell peppers 15 baby plum tomatoes 3 cloves of garlic sliced salt & pepper 18 leaves fresh basil 8-10 oz goats cheese (like feta) 6 tbsp fresh bread crumbs olive oil
method: preheat oven to 200 degrees halve peppers lengthwise , deseed and remove pith place in an oiled ovenproof dish skin side down note: you might need to slice the back with a knife ever so slightly so the lay straight(-anyway who wants "rock 'n' roll" peppers!) pop some sliced garlic-to taste- in each and then 5-6 tomato halves.pour 1 tbsp of olive oil over each half and bake 35-40 minutes. leaving the oven on remove dish and top with basil leaves then fill with cheese.sprinkle with bread crumbs sprinkled with a little more oil and bake for a further 3-5 minutes until the cheese is melted and the crumbs browned. and top with bread crumbs. serves 6 as a starter or side dish.
