Vegetable-Rice Salad
3/4 cup mayo 2 Tablespoons cider vinegar 1 Tablespoon minced onion 1 small clove garlic, minced 1 teaspoon salt 1/4 teaspoon pepper 2 cups cooked rice 1 carrot, thinly sliced 1/4 cup diced green pepper
In medium bowl stir together first 6 ingredients. Add remaining ingredients; toss to coat well. Cover; chill at least 2 hours to blend flavors. Makes about 3 cups.
