VEGGIE CORN SALSA
1 package (16 oz. size) frozen corn 2 small cans black olives, sliced 1 bunch green onions, chopped SEASONING: 1/3 cup olive oil 1/4 cup lemon juice 1/4 cup lime juice 5 cloves garlic, chopped 3 tablespoons cider vinegar 1 teaspoon leaf oregano 1/2 teaspoon salt 1/2 teaspoon pepper TO SERVE: 3 medium avocados, diced 2 medium tomatoes, chopped
In a large bowl combine corn, onions, and olives; set aside.
TO PREPARE SEASONING: In small bowl, mix olive oil, lemon juice, lime juice, garlic, vinegar, oregano, salt, and pepper together. Pour seasoning mixture over corn mixture; stir and set aside to marinate.
TO SERVE: Before serving, add avocado and tomatoes. Serve with corn chips.
