Susan Branch's Autumn book while looking for something else...thought the pomegranate addition was interesting...Micha
HAPPY RICE1 1/2 cups uncooked white rice (I'd use brown rice)
1/2 cup sliced almonds
1/3 cup golden raisins
seeds from 1 large pomegranate (optional)
Cook rice according to pkg. instructions.
When rice is done, stir in all additional ingredients.
Note: You can make Happy Rice even Happier (when serving it in a menu that has no sauce) by adding:
1/2 stick butter
2 diced red pears
1/2 cup minced green onion
1 Tablespoon minced fresh thyme
2 teaspoon orange zest
salt and pepper
