MELTED BRIE SALAD
4 to 6 ripe tomatoes, sliced 1/2 to 3/4 cup Italian salad dressing (with a touch of dried oregano and 1 tsp mustard added) 3 rashers of bacon, cooked and diced 10 oz brie cheese, cut into 8 slices baby spinach (for garnish)
Preheat broiler.
Dip tomatoes in dressing and arrange on an oven proof plate. Top with slices of brie, then top with bacon pieces. Drizzle with more dressing.
Place under a preheated broiler/grill until cheese melts. This can also be done in the microwave on high 2-3 minutes.
The whole plate can then go to the table garnished with baby spinach salad leaves.
The salad dressing can be 'upped' and makes a great dipper for crusty French bread to go with this.
