GREEK ORANGE SAUSAGESource: The Sausage Making Cookbook by Jerry Predika1 cup white wine peel of 1 large orange 3 cloves pressed garlic 1 tbsp. allspice 1 tbsp. black pepper 1 tbsp. cinnamon 1 tbsp. salt 3 lbs. fine ground pork butt 2 lbs. fine ground beef hog casings (optional) Combine wine, orange peel, garlic, allspice, black pepper, cinnamon, and salt. Mix in blender until the orange peel is finely chopped. Mix well into meat and stuff into casings, or make patties.
