FISH COATING MIX
Yield: 1 3/4 cups

COATING MIX
1 1/2 cups cornmeal
1/4 cup flour
1 tbsp lemon pepper seasoning
2 tsp salt
1 tsp onion powder
1/2 tsp paprika

Combine mix ingredients. Store airtight; mix before using to redistribute seasonings.

FOR FRIED FISH:
fish
buttermilk
coating mix
oil

To make fried fish:
Moisten fish with buttermilk, roll in coating mix.

Heat 3-inches oil to 375F.

Fry fish, one piece at a time, until golden brown, 4 to 6 minutes.
