CANNOLI BREAKFAST

Note from source: This is something I concocted myself. And once you have made the spread and it's ready in the fridge, breakfast doesn't get much easier than this.

1 pint container of skim or fat free ricotta cheese (may be drained first)
2 to 4 tbsp. powdered sugar (to taste)
1 1/2 tsp. cinnamon (or to taste)
1/4 tsp. vanilla
1/2 cup natural dried tropical fruit snack mix*
1 to 2 tbsp. mini chocolate chips (optional)
Cinnamon Raisin Bread slices, toasted

Mix the ricotta cheese with the sugar, cinnamon and vanilla until well blended. Stir in the fruit and chips, if desired. (Personally I have a sweet tooth and use them!)

Spread on slices of toasted Cinnamon Raisin Bread and enjoy!

*If the dried fruit pieces are large, chop them up a bit more. In place of the dried tropical fruit snack mix you can also use the following:
- Citron
- Your own chopped up mixture of dried fruit (raisins, apricots, pineapple, cherries, papaya (my fave), or whatever else you like.
- Packaged fruit-based trail mix.
