MRS. FIELD'S FRUIT-FILLED JEWELS

3/4 cup salted butter, softened
1/2 cup powdered sugar
2 large egg yolks
1 tsp. pure vanilla
1 1/2 cups all purpose flour
1 cup any fresh fruit jam

Preheat oven 325 degrees.

In a medium bowl cream butter with an electric mixer set at medium speed. Add sugar and beat till smooth. Add egg yolks and vanilla, and beat at medium speed till light and fluffy. Add flour and blend at low speed till thoroughly combined.

Gather dough into a ball and flatten into a disk. Wrap dough tightly in plastic wrap or in a plastic bag. Refrigerate 1 hour.

Using a floured rolling pin, roll dough on floured board to 1/4-inch thickness. Cut circles with a 2-inch diameter cookie cutter or drinking glass and place on ungreased cookie sheets 1-inch apart. Continue using dough scraps, rerolling and cutting till all dough is used.

Drop 1/2 tsp. of fruit jam in center of each cookie, then top with another cookie. Using tines of a fork, seal edges of cookies.

Bake for 15-17 minutes or till edges begin to brown.

Makes 2 dozen
