BANANA DOUGHNUTS Source: nlb
1/4 cup shortening 1 cup sugar 2 eggs 1 cup mashed bananas 1 1/2 tsp vanilla 1/2 cup buttermilk 5 cups sifted flour 4 tsp baking powder 1 1/2 tsp salt 1 tsp baking soda 1 tsp nutmeg
Cream shortening and sugar together; add eggs and beat well. Combine bananas, vanilla and buttermilk; add to creamed mixture alternately with sifted dry ingredients.
Roll 1/3 inch thick on lightly floured surface; cut with floured cutter. Let stand 15 minutes.
Fry in hot deep fat (375 degrees F.) about 3 minutes. Turn once.
