PIZZETTES (ITALIAN CHOCOLATE COOKIES)

4 1/2 cups flour
2 heaping tbsp. cocoa
1 tbsp. grated fresh lemon rind
4 tsp. baking powder
1 tsp. cinnamon
1 tsp. ground cloves
1 cup hot coffee
1/2 cup oil
2 1/4 cups sugar
1 (6 oz.) pkg. chocolate chips
2 tsp. lemon extract
2 eggs, slightly beaten
1/2 cup chopped nuts

Preheat oven to 400 degrees F.

Take flour, cocoa, lemon rind, baking powder, cinnamon, cloves, and mix the ingredients together good on a large board or table. Make a hole in the mixture.

In a bowl, mix the coffee, oil, sugar, and chocolate chips. Pour this into dry ingredients. Add lemon extract to mixture then slightly beaten eggs. Add the nuts to the mixture and then blend all ingredients thoroughly.

To form the cookies, roll small portion of dough with hands to form a roll like rope about 1 inch thick. Slice on an angle and place on ungreased cookie sheet. Sprinkle a little flour on them.

Bake at 400 degrees for 8 to 10 minutes. When cool they can be frosted.
