MORNING GLORY MUFFINS
2 cups flour 1 1/4 cups sugar 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 2 cups grated carrots 1/2 cup raisins 1/2 cup chopped nuts 1/2 cup shredded coconut 1 apple, peeled, cored and grated 3 eggs 1 cup vegetable oil 2 tsp. vanilla
Preheat oven to 350 degrees.
In a large bowl, sift together the flour, sugar, baking soda, cinnamon and salt. Stir in the grated carrots, raisins, nuts, coconut and apple.
Beat together eggs, oil and vanilla. Stir into flour mixture just until moistened. Spoon batter into well greased muffin tins.
Bake 20 minutes.
