DOUBLE CHOCOLATE BISCOTTI

2 1/2 cups all purpose flour
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup cocoa
1/2 teaspoon soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
3 ounces white bakers chocolate, chopped
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract
1 to 2 tablespoons water

Preheat oven to 325 degrees F. Coat a baking sheet with cooking spray.

In medium bowl, mix flour, sugar, cocoa, soda, baking powder, salt, cinnamon and white chocolate. Add eggs, vanilla and just enough water to form a stiff dough. Turn dough out onto a lightly floured surface; knead 8 to 10 times. Form dough into a 16x2x1-inch log. Place log onto prepared baking sheet.

Bake at 325 degrees for 30 minutes. Remove from oven and cool for 10 minutes.

Place log on cutting board and with a serrated knife, cut log diagonally into 1/2-inch slices, using a sawing motion.

Place slices, cut side up, on baking sheet and bake for 10 minutes.

Turn slices over and bake an additional 10 minutes. Centers will be slightly soft but will harden as they cool. Remove to wire rack to cool.
