CHOCOLATE CHIP BISCOTTI
2 cups all purpose flour 2/3 cup sugar 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup semi sheet mini chocolate chips 3 large eggs, beaten 1 teaspoon pure vanilla extract
Preheat oven to 350 degrees F. Coat a baking sheet with cooking spray.
In medium bowl, mix flour, sugar, soda, salt and chocolate chips. Add eggs and vanilla, stirring until blended. Turn dough out onto a lightly floured surface; knead 8 to 10 times. Form dough into a 16x2x1-inch log. Place log onto prepared baking sheet.
Bake at 350 degrees for 30 minutes. Remove from oven and cool for 10 minutes.
Place log on cutting board and with a serrated knife, cut log diagonally into 1/2 inch slices, using a sawing motion.
Place slices, cut side up, on baking sheet. Reduce heat to 325 degrees and bake 10 minutes.
Turn slices over and bake an additional 10 to 12 minutes until golden. Centers will be slightly soft but will harden as they cool. Remove to wire rack to cool.
