ZUCCHINI SQUARESSource:
The New Zucchini Cookbook by Ralston and JordanMakes about 48 squares
3 cups thinly sliced zucchini
1 cup biscuit mix
1/2 cup vegetable or olive oil
1/2 cup chopped onions
1/2 cup grated parmesan cheese
4 eggs, beaten
2 Tbsp chopped fresh parsley
1 clove garlic, chopped
1 tsp seasoned salt
1/2 tsp dried oregano
pepper to taste
Preheat oven to 350 degrees Fahrenheit. Grease a 13x9x2-inch baking pan.
In a large mixing bowl, combine ingredients and spread into the pan.
Bake until golden, about 25 minutes. Cut into squares.
