Risotto Verde
1 tbsp butter or margarine 4 green onions, sliced 1/4 cup celery, chopped 1 cup rice, uncooked, long-grain 10 1/2 oz chicken broth, condensed (or beef broth) 12 oz water 8 oz (2 cups) mann's salad spinach, packed firmly 3 tbsp parmesan cheese, grated
Heat margarine in a skillet over medium heat. Add onions and celery and cook until tender-crisp.
Add rice and cook 30 seconds, stirring constantly.
Stir in broth, water and Mann’s Salad Spinach. Heat to a boil. Cover and cook over low heat 20 minutes or until the rice is done.
Stir in cheese and serve.
