This is my favorite rice salad. I use prosciutto, very thinly sliced instead of the pepperoni.
4 cups cooked rice 2 medium tomatoes chopped 2 small zucchini diced 1 green pepper, diced 2 celery stalks, diced 2 carrots, peeled & diced 1 medium package frozen peas, thawed 1 can corn kernels, drained 3/4 cup thinly sliced green onion 1 cup dried pepperoni
Lemon Herb Dressing: 1-8oz. can plain yogurt 1/4 cup lemon juice 3 tbsp olive oil 1/4 tsp dried marjoram, crumbled 1/4 tsp dried thyme; crumbled 1/4 tsp garlic powder 1/4 tsp ground pepper
For the Dressing: Combine all ingredients in a bowl & mix thoroughly. Chill until ready to use.
Mix remaining ingredients in large bowl. Pour dressing over. Toss lightly & serve. Delicious!
