Chicken Cacciatore Gourmet This is from Clementine Paddleford's Cook Young Cookbook2 1/2 to 3-pound broiler-fryer, cut up 2 Tablespoons cooking oil 1 can (10 1/4 oz.) meatless spaghetti sauce 1/4 cup dry red or white wine 1 can (2 1/2 oz.) sliced mushrooms Brown chicken in oil until golden brown. Combine spaghetti sauce, wine, mushrooms and mushroom liquid. Pour over chicken. Cover and simmer about 45 minutes or until chicken is tender. Yield: 4 portions
